Gluten Free Waffle (aka chaffle)

Whatever it is, the way you tell your story online can make all the difference.
This is probably the easiest, most fun and versatile gluten substitute recipe I know. Only two ingredients are needed and you can use the finished product for many sweet or savory dishes. This isn’t just about making a waffle. Think of it as a delicious substitute for bread, for pizza crust, and of course for waffles or pancakes. And bonus for those of you watching your carb intake - it’s fully keto!
Equipment needed:
1 egg
Shredded mozzarella (shred your own in bulk with this!)
Small mug
Something to stir with (I love using these!)
Instructions:
Crack 1 egg into small mug.
Mix yolk and white together well, but don’t fully beat. I like to use these adorable, handy mini whisks! I absolutely love the old-fashioned handle design for a bit of nostalgia in the kitchen.
Add shredded mozzarella of about equal volume of the egg to the mug. This is why I suggest a mug instead of a bowl as it’s easy to just eyeball doubling the volume in the cup once you add the mozzarella.
Combine the egg and cheese well. Have you figured out yet that the “ch” stands for “cheese” in chaffle? 😄
Turn on your Dash waffle maker.
Once hot, using a small spoon, spoon out an amount to just barely cover the bottom plate, keeping in mind that most small gaps will fill in and the batter will go out to the edges once you close the lid. Do not overfill.
Close the lid and let cook for about 3-5 minutes.
You’ll notice steam releasing from the waffle maker. The key to proper cooking time is to cook at least until this steam stops. Leave it cooking a bit longer after that for a crispier chaffle.
When you open the waffle maker, your “chaffle” should automatically release from the top plate and be easily lifted off the bottom plate.
Set your chaffle on a plate and continue on to make your next.
The chaffles will seem a little soft upon initial removal from the waffle maker and then will crisp up a bit as they cool down. If you like them even crispier, you can always throw these in a toaster for a couple minutes to finish them off.
